Mexican Yellow Paste

This Pollo Asado inspired recipe was featured in Episode 1 of Culinary for Cool People, and features the use of the mortar and pestle to achieve maximum flavor!

Ingredients        

Cilantro Stems, Minced

Garlic cloves, whole

Onion, minced

Turmeric powder

Salt

Black peppercorns, whole

Cumin seeds, whole

        Quantities

25g or stems from 1 bunch

30g or about 10

55g or 1/4 whole onion

3g or 1/2 tablespoon

3g or 1/2 teaspoon

8g or 1 tablespoon 

0.5g or 1/4 teaspoon

Instructions:

1) Grind/smash black pepper and cumin seeds in mortar and pestle or spice grinder.

2) Add cilantro stems and grind/smash.

3) Add onion and grind/smash.

4) Add garlic and grind/smash.

5) Add salt and turmeric powder and mix together.
